At the pass is Chef Lucia Ferraro, a native of Campania and a Summit alumna who reads her guests as carefully as her ingredients. Her signature risotto allo zafferano — Carnaroli rice, Sardinian saffron, 24-month Grana and a whisper of gold leaf — is pure theatre grounded in technique. Bottoni filled with Puglian burrata and datterino, and a bone-in costoletta alla Milanese, round out a menu that moves from north to south with confidence and includes carefully considered halal options.

The wine programme leans into structured Italian classics, from a brooding Brunello di Montalcino out of Tuscany to a crisp Gavi di Gavi from Piedmont, poured by a team that treats each bottle as part of the meal's arc. Real Puglian burrata, San Marzano tomatoes and aged Parmigiano anchor the kitchen in genuine Made-in-Italy provenance rather than imitation.
